Shrove Tuesday, also known as Pancake Day, is a firm favourite in many households – and it’s not hard to see why. This year, the much-awaited sugar-filled day occurs on March 1st and marks the last day before the start of Lent, traditionally a period of abstinence for 40 days.
Try This Ultimate Pancake Mix
Serves 6
- 2 large eggs
- 180ml milk
- 120ml water
- 120g plain flour
- 45g melted butter
Method:
1. Whisk together all the ingredients until smooth, then cover and refrigerate for one hour.
2. Melt some butter in a non-stick pan over a medium-high heat. Pour some batter into the bottom of the pan, then lift and tilt the pan around, so the batter forms an even coating.
3. Cook for 40 seconds, then flip and cook for another 10 seconds.
4. If you’re not eating them immediately, keep warm in a low oven between sheets of greaseproof paper.
Top tip: Transfer your batter into a washed-out squeezy ketchup bottle. It will make pouring out the right amount of pancake batter easier and less messy, and will allow for creative designs in the pan!
